These came into fruition after looking for sasquatch and bigfoot recipes on pinterest. I found almost nothing. If I was going to make a cookie bar or something for sasquatch, I first needed to decide that I needed to figure out what flavors should be involved. After a lot of thinking, I decided that the bottom layer should be hearty, which is why I went with almond-maple-oat. Sasquatch lives out in the woods and I instantly thought "Berries!". The crumb top is to help keep everything all together.
Sasquatch 3-Layer Bake
Bottom:
1 cup Almond Butter
1-½ cup Quick-Cooking Oats
½ cup Maple Syrup
1 Egg
Middle Layer:
1 cup Frozen Triple Berry, thawed
⅔ cup Berry Jam (pick your favorite)
Top Layer:
1 stick Butter, room temperature
½ cup Brown Sugar or Coconut Sugar
1 tsp Cinnamon
½ cup Flour
½ cup Nuts, chopped (pick your favorite)
Preheat oven to 350F. Grease a 9”x12” glass baking dish.
In bowl #1, mix all of the ingredients for the bottom. Once well mixed, place evenly in the bottom of the baking dish.
In bowl #2, mix your thawed berries and jam together. It may help to microwave the jam for 20-30 seconds. Spread this mixture over the bottom layer.
In bowl #3, use a fork to mix the top layer ingredients together forming a nutty crumble top. Evenly sprinkle this over the middle layer.
Bake at 350F for 25-30 minutes. Let these bars cool before cutting and serving.
